Easy Bruschetta

Okay, I’ll admit that this is not a traditional Russian recipe, but it certainly fits the Magical Tablecloth approach. It’s quick, easy, and it will make your house smell great while you’re cooking it.

4 16oz cans of stewed or diced tomatoes (drain one of the cans)

8 cloves of garlic, diced

2 small red onions, diced

1/2 tablespoon basil

1 tablespoon rosemary

1/2 teaspoon of red pepper flakes (if you like spicy food)

olive oil to grease the pan and to top bruschetta

1. Grease the pan with olive oil (I use a glass rectangular Pyrex pan).

2. Put tomatoes and all the other ingredients.

3. Bake uncovered at 350-400 degrees (Fahrenheit, of course!) for 2 hours.

4. It tastes best with French bread. Enjoy!

  1. It may not be Russian, but it looks like deliciously tasty Italian. I’m in!
