Mushroom and Beans Salad

When I was growing up in Russia, fresh produce was hard to buy, especially in the cold and snowy winter. That’s why a lot of Russian recipes relied on canned food. Often, my mom and grandma (like most Muscovites!) would buy canned food and save them for a special occasion. A special occasion could be anything from a holiday dinner to friends dropping by. Cans of food meant a meal ready in a few minutes. Here’s one such quick dish.


One 16 oz can of mushrooms

One 16 oz of red beans (or black beans! pick the ones you like best)

One large onion

One large carrot

Salt and mayonnaise

Oil or butter for sautéing


1. Shred the carrot.

2. Thinly slice the onion.

3. Saute carrot and onion. Let them cool.

4. Mix mushrooms, beans, onion and carrot in a salad bowl with salt and mayonnaise.

5. Enjoy!
